The food at the Grand Salon is an interpretation of Portuguese gastronomic heritage. But our Grand Cuisine also promotes a careful ingredient selection and a reduction of overproduction, supporting local agriculture and promoting efficient cooking methods.
Less is more – is a conscious decision of our kitchen team. We are pleased to offer you a small but very fine selection of our dishes, and we assure you that really everything in our kitchen is freshly prepared by using local and mostly seasonal ingredients.
Less is not only more, less is also better. By embracing the idea of a smaller menu, we are happily able to contribute to a more sustainable and waste-conscious food system.
“Anybody interested in solving, rather than profiting from, the problems of food production and distribution will see that in the long run the safest food supply is a local food supply, not a supply that is dependent on a global economy.
THE CULINARY AFFAIRS BUTLER
Remaining loyal to a sustainable cuisine is one of the Grand Salons promises, so there is a thoughtful approach to how the food we eat plays a role in protecting Mother Earth. The kitchen team partners with regional producers which is reflected in the “superior quality” of everything served at the Grand Salon table. There’s bread from a bakery in Vila Real de Santo António, meat from a top butcher in Manta Rota, olive oil, fruit and vegetables from Moncarapacho, organic tomatoes from Tavira, fine flor de sal from Castro Marim, creamy curd cheese from São Brás de Alportel.
